I think it's because light novel writers, manga writers and original writers spend to much time with otaku-related media and the internet and less with the real life. They often use characters of anime as the inspiration for their own characters instead of real people. The authors of the past prefered to use real people and often realistic plotlines for their stories and were sometimes inspired by good literature. This made their characters and their storylines a bit more relatable for many people and more realistic. The fanbase also became more autistic through the internet and therefore it was more profitable for anime studios to produce more autistic stories.

My two cents:
1. Cost - it's expensive to make good animated shows and the revenue isn't worth it. Why waste money on making a new Angel's Egg when you can make at least 100 shows about a cute maid or a tsundere loli?
2. People are dumb - just look at the number of threads on Zig Forums about waifus and you'll have your answer.
