Why even buy a ps5 at this point?

Realistically speaking, if I want something that will last me 4-5 years (Don't care if I have to drop settings, though I'd at least like to keep 60fps), would $1300 usd be enough? Not buying right now, probably not even this year cause I'm still using a prebuilt I won in a twitter contest, but I figured something like an 8800k, 2070 super (or 3k series if they drop), 16gb ram, a 1tb ssd, etc should be enough, since I won't need a monitor or anything.

Absolutely, it will last you nicely specially if you stay at 1080p 144hz. 2070 super might be a bad idea. Wait to see if the 3060 is good. You have more than enough cash, you can possibly go higher.
I'm not sure about pricing in other regions, but are you sure you can't buy a RTX 3070 for 500$ usd, a b550 and a ryzen 5 3600 and still afford the rest of the build? That would last you many years, and allow you to upgrade to a series 5000x, maybe even beyond.

No need to buy a 3070 either if you really only want 1080p. You can also take a 3060. Or maybe a cheap 2070 super if you find one, but i wouldn't count on the later. RTX 20xxs aren't dropping in price as of recent.
