Because they've always been a highly insular 'other' within the societies they inhabited. They have their own language and religion, and often isolated themselves in their own towns and neighborhoods disconnected from the culture that surrounded them. This naturally fosters distrust, made worse by the fact that kings and feudal lords hired Jews as official money lenders to bypass the church's restrictions on Christians practicing usury, which back then referred to lending money with any interest at all, not just "excessive" interest as capitalists have redefined it to mean. This made the distrusted others much wealthier than the native population and also made Jews the primary practitioners of banking and finance with everything that implies. It's actually pretty easy to understand how antisemitism came to be so common in the west.
The reason people, rightfully, hate the state of Israel is because of their overt and covert manipulation of other countries politics to serve themselves.
