Not a fan, but the first time I heard of RWBY, it was from Gmod models I downloaded. It was from a big pack of models, so I didn’t really know what I was getting, but the 4 characters were pretty hot.
I think that’s the appeal, a diverse cast of waifus. The animation may look like crap, but the actual character designs are what people are into. They want to learn more about these characters, so that the porn becomes more enjoyable. That’s why they watch the show.
At least some people. I’ve still never watched a full episode. The animation is too ugly for me. Porn is still good though

Joke answer: the porn.
Serious answer: When it started? It wasn't an amazing show, but it knew what it wanted to be and stuck with it. The characters, while not deep, were enjoyable to watch and had nice interactions. The fights were fantastic, and the villains, while not deep, were simple and fun. It was flawed sure, but it knew what it wanted to be, and it did it well.
Now? I'm only sticking around because it can offer some decent moments, but it's got some incredibly low lows, but the highs are high enough to keep me invested, but I'm not exactly liking it. The characters might as well be completely different people, and aren't likable in the slightest anymore except for the villains. It's "complex" writing is hardly handled well at all without drifting into the mindset of, "The Protagonists are always right because they are the heroes, even when what they are doing is wrong."
TL;DR: It used to be a fun, "bad" show, but now, it isn't a complex, "good" show like it clearly thinks it is.

That's the great thing about the show, there is no true appeal to it. You could ask a hundred people that question and their answers would range from "Monty's fighting" to "the wacky turbo-tard lore" to "the Pyrrha femcuck fanfics".
