I always wondered about the porcophobia in so many cultures. I used to think it was because pig meat was making people sick and religious leaders didn't want their people to die, but christians (most of whom eat pork) flourished and became the most widespread religion on the planet so that's obviously wrong.

It could have been the pigs were sick around the time it was implemented into Judaism, but that it had passed by the time Christianity decided to exclude it. I don't know, just spit-balling.

pork is harder to prepare\cook with limited water, which would increase the risk for gastrointestinal illness, which in turn are deadlier in such climates because they cause dehydratation

Ever hear the expression "first you kill the pig, then you cure it"?
Pigs are swarming with bacteria and parasites so you need to heavily disinfect the meat before cooking it, hence why the animal needs to be dead first.
Jews and Muslims use god as a justification for why you shouldn't eat pork because religious rules are easier to implement than anything else, but the Romans also forbade eating pork knowing how filthy it was from a completely secular standpoint.
It's sort of like how modern Westerners don't eat rats.

Beef was much more rare(probably because cows and bulls were more useful as working beasts).
