He got a human side, he loved his wife, he loves his sons, he even cares for his foster son. Is just that he believes that emotions are dangerous, to be strong you must focus on being strong, you can't be vulnerable. Darkseid believes in an universe where everyone is strong and determined, united and working as one, emotions will blind you and make you vulnerable.

An otherworldly despot is far easier to accept as pure evil than a sociopathic teenage girl.
Both are popular, but more people are going to be upset at Azula's depth being so hidden than anything else.
It's the ongoing feminization of mass media. Girls have always liked bad boys that, at heart, have a spark of goodness and a tragic past.
Pure evil is impopular. I don't know if that is a good sign, that most people don't seem to realize some people are really just monsters in disguise.

In the same way that sometimes people want a complex, flawed hero with changing arcs and fluid personality, and sometimes they want a hero that is firm in their character, their beliefs, and pure as a hero. Sometimes we want a Spider-Man, or a Tony Stark, someone who battles their demons as much as the bad guys, but sometimes we just want a good man trying to do the right thing, Superman. In that we also may want a complex, human villain, that has tragedy and sympathy, like Mr. Freeze, but sometimes we want a pure villain that embodies darkness and a wall to be overcome. Darkseid is pure, no true sympathy or redemption, but the ultimate embodiment of that evil. Sometimes we just want a pure story of good vs evil, but don't mistake that purity as basic or limited. There's plenty you can do for a purely good vs purely evil conflict, in fact I'd say it makes the storytelling easier without needing to weigh it down by justifying every action the villain takes.

It's an old Chick tract that someone made better by swapping out preaching for Jesus with preaching for Darkseid.
Mr Freeze is the biggest example that giving a tragic past to a villain doesn't make him interesting or complex. At the end of the day, Freeze has the character of a fucking coconut. While, an old school tyrant like Darkseid or a cackling mad scientist like Sivana are charismatic and don't need any tragic backstories.
This is the kind of cartoon villain you get when you try to give Darkseid a backstory.
