Off the top of my mind i guess you could check out Silverwing. It's been a while since i saw it though, so don't know if it's as good as i remember it

What's the best way to rewatch ATLA? I binged the first season in a couple of days, but I'm feeling like I want to savor the show.

Just watch shounen anime, which is what this series imitated.

Dragon Prince is your best bet for western animation, it's essentially a western fantasy version of Avatar. Not anywhere near as good, but it has a similar feel. If you want to look at anime, there are a lot of shows that nail a similar feeling (after all that's what Avatar was based on, shounen anime). I'd recommend Fullmetal Alchemist (2003 or Brotherhood).

Katara was curbstomping Azula under Ba Sing Se, she has no idea how to fight waterbenders.

It's Sozin's Comet. The entire point is that firebenders are ridiculously OP. As much as Zuko challenging Azula to 1v1 combat is about honorably settling the matter of succession in an Agni Kai and symbolically facing his demons (Azula being a twisted version of what he might have become under Ozai), on a more practical level this is when firebenders get a ludicrous powerboost. Ozai and a dozen firebenders are fully capable of genociding an entire continent. Iroh, probably the 2nd-best firebender alive, takes a whole city almost by himself.
Katara simply shouldn't even be a factor in this fight. She fought Azula comfortably on a regular day when she had plenty of flowing water around and a waterfall. She wins the fight because Bryke were probably uncomfortable about their finale having a man beating the shit out of his little sister, also it's really hard to "end" a firebending duel without mutilation.
Sokka lost 1v1 fights with Suki and Ty Lee. Even an unstable Azula would have turned him to ashes.
Technically Katara didn't really fight Azula. She only outsmarted her which probably wouldn't have happened if Azula wasn't insane.
To this day I wonder what Zuko was going to do with the lightning. I think there is a chance he only wanted her to get tired more quickly. Maybe he could have also restrained her afterwards.

Azula had been shown to escape Ice before. They nerfed her so Katara could be given a moment. If they had kept in power level for the fight then Katara would've just died. Encasing Azula in Ice was a smart solution but it had already been tried and failed earlier in the series.
Azula wouldn't have used lightning if Katara didn't walk into screen 2 frames before he started getting cocky

I don't think he would have shot it back at her. Ozai tried to murder him with lightning and even in the heat of the moment, Zuko had the restraint to redirect it into the ground. There's no chance he would have unleashed it back on her.
That's kind of the funny thing about Iroh inventing lightning redirection, and Zuko learning it. The process of learning it and the mindset necessary almost seems to remove any kind of malicious intent. Otherwise Iroh would have simply absorbed Azula's lightning shot in season 2 and redirected it right back in her fucking face instead of harmlessly into the sky.

Hell even Zuko had comfortably escaped ice, at the North Pole, under a full moon, and I'm sure it's a consensus opinion among all fans that Azula is a better firebender than season 1 Zuko.

I think if you really want to "savor" it do one episode a day. When it was airing we obviously had to wait a week until the next episode and it was all I could think about. But as said if you really can't wait you should really only do 2 maximum
the interesting thing about the sozin's comet fight is that Azula very clearly goes way easier on Katara than she does on Zuko. You can see how much weaker Azula's attacks get IMMEDIATELY as her target switches to Katara.

perhaps because the choreographers realized how ridiculous it was to try to have a waterbender attempt to fight 1 vs 1 against a fucking superpowered firebender even despite her insanity.

Just for the record, your post read in Azula's voice explains pretty well why Katara would be able to do it.
In a more meta sense, morality and theme trumps story anyway, to some degree at least. It's the rule of cool, but for sappy stuff.
Take the easy route out and say that the lightning took a lot of energy out of her
