We know the Gems had been interacting with humans for a long while. Pink shagging humans while still in her pre-Rebellion Rose outfit, Bismuth readily assuming a human was a Crystal Gem member, and even Pearl saying Dewey’s ancestor became a good friend. I can’t imagine she’d only learned about children recently, especially having been around plants and animals and knowing that things have to grow.

Bismuth made a sword specifically designed to Poof anything, which we know with one stab works even on Diamonds. Ones who can tank an orbital strike from a chunk of earth and wood, and survive being crushed by planet-killing Castlevania Legion Gems.

Its untested, but I’d gamble that at best it would crack them, worst an outright Shattering.

Gems adjust their density to the gravity of the environment, but can they do it at will? Did Amethyst have more mass as a horse than as a bird?

I know she has heavy footsteps as a wrestler, but she assumes that form in a fight to hit with more force. I’m not sure if she has more actual weight or if she’s just stomping to complete the image.

Gem durability doesn't matter because we see a Ruby tank a fucking orbital landing but a fusion of one and an Aquamarine, for instance, got poofed real easy.

That's what I mean, you'd expect she'd have a lot more understanding based on all the stuff you just said about interaction - hell, the human CG war victims alone should give a good view of human fragility.

Plus she just seems too lax to be a mad scientist, although with the secrets from Pearl, Lion and, yeah, the crystal lizards it's not wholly implausible.

Maybe they have hardpoints? Garnet crushed Peridot fairly easily, who later survived having boulders dropped on her like Wile E. Coyote. The sword Poofs Pink so easily that her entire Court, including Sapphires, believed she’d been Shattered yet it can also be blocked by Holo-Pearl swords and Bismuth’s fist weapons. Seems it has to actually stab the main body.

A good question is if the Breaking Point has to hit the Gem or if hitting the light body would cause a Shatter.

I'd personally believe Gems can control how hard it is to kill them and pull the defences up to a degree.
Otherwise it just doesn't make sense for a Pearl to poof from a good back stab while a Peridot can easily survive all that shit you described.
It's kinda funky how the combat is as contrived and unexplained to save the series some dignity as it is in Dragon Ball, lul.

Another option is that the Gem surface toughness is pretty high, i.e. blunt impact is not particularly threatening (which makes sense, Gems don't have internal organs, blood or, essentially, anything at all that can be broken), but stabbing damage actually poses a severe threat: the gem body is essentially a flexible 'balloon' of sorts, and it can be popped.
