Bryke were always terrible writers and nostalgia for the original series can't change that.
All they really needed to do is drop some hints at the removing bending thing earlier in the show so it's not a total asspull.
Aang could only use it when Ozai was imprisoned, he couldn't beat him "really easy" he was pulling every trick out of his hat just to survive in what was probably the longest fight in the whole show. He could have just killed him instead if he didn't learn it.

I guess I understand this criticism, but its really weak. Oozai was defeated before he lost his bending. The show wasn't about oozai it was about the world. The boomerang squad took down the fleet and kataara and zuko took the fire nation. All the spirit bending did was allow them to capture oozai in a humane way.

Having aang send him to the fucking spirit world. Zhao already showed that that's possible, he could've had a realization, contacted the panda or some shit, and told them eat him if they wanted, or to treat him like dirt.
Then Korra could've been about something insane like ozai disciple spirits who either decided that conquest rules and they want the real world, or vengeful spirits who, after seeing ozai do stupid shit for a while, decided that everybody has to pay, especially the stupid avatar for shuffling his prisoner off to taint their reality instead of sacking up and exploding his lungs
it's not about just showing murder, it's about who is committing it. right now I can't think of any other cartoons where the heroes murdered (human) villains

Yeah does anyone feel an ounce of sympathy for Ozai? He's never depicted as anything other than a complete monster. Both Sozin and Azulon are depicted as having redeeming qualities, but Ozai never is. We already know that he's a complete monster because of what he does to his own son. It only gets worse if you start to think that Azula is the way she is entirely due to Ozai's parenting.
Why does he deserve mercy? Kill the bastard, I say. Leaving him alive is unsatisfying because he's such an absolutely awful human being that it feels like Aang is letting him off easy. It feels like he doesn't truly get what he deserves.
