Hulk not being able to bring Widow back is bullshit. On a cosmic, alien scale shouldn’t bringing back the dead be easy? You’re telling me aliens in the MCU have devices that can rebuild a ship with the click of a button, tear through the fabric of reality, and many of regenerative blood yet bringing a human back to life by healing a few tiny cells is impossible? Hell in AoU that Korean lady had a tissue printer that was able to 1:1 rebuild Hawkeye’s skin. HYDRA made fully functional prosthetics in the 1950s. (If AoS was canon, that extends to like-real hands, full on resurrection with Kree blood, and recreating people 1:1 completely without even needing a body with the Framework, but it’s not canon so.)
Yet the magic stones that give the same power of creating a universe couldn’t? Thanos himself was going to use the stones to build a NEW FUCKING UNIVERSE. Bringing back one petite woman was hard?
Also why is death limited by magic? The whole point of Doctor Strange is resurrection of the dead is impossible. But why? Heal a few cells here and there and you’re fine. It’s easier to time travel, punch holes in reality, and travel to other universes than it is to heal a couple cells? Which also brings up Strange not being able to heal his hands as bullshit, but whatever. Why not just get an arm like Bucky’s?
The Stones themselves prevent it. Kind of a catch 22, you need the Soul Stone to bring her back, but it won’t let you because you can’t use the Soul Stone to get her back since that’s how the trade works

Not all science advances at the same rate. The ability to make a suit of iron man armor is mechanical engineering, metallurgy, electrical engineering, and computer science. Nothing about it implies a similar level of sophistication regarding advancements in biology.
In World War 2, we developed radar, stealth technology, rockets, and the atom bomb. You know what we learned about medicine and biology in WW2? There was a study about the effects of starvation on the body in order to help plan reconstruction efforts. Notice how one of those is way, way less impressive than the others?
Advancement of biology has always lagged begin the other science to a massive degree, because even a single living thing is a tremendously complex system we can't accurately track the details of. By the time the Thanos situation is solved and they got to her I'm pretty sure degradation would be setting in, assuming there's no fauna on the planet that to pick her corpse clean they'd have to bring her shattered remains back and jump through the hurdles to repair it with as few complications as possible before they even think of trying to imbue it with life again. There's no way to recover the information. That's entropy. You might resurrect a body; give it a heartbeat and breathing. But if the neural interconnections which make up your mind have deteriorated, all you have is a husk. Personality is formed by experience as well as genes. A body genetically identical to Shakespeare or Einstein or Beethoven is unlikely to have the talent of the original.

Basically, we knew what DNA does in a general sense but we kept running into problems where we would change a gene that we were SURE did one thing and would also accidentally change other stuff too, and we didn't know what that was happening because we only changed a single gene. For a while we assumed that a given gene must control multiple forms of expression, but had not made the connection why or how.
The revelation was that DNA is actually read in two different directions. Think of it like a CD where you have a bunch of files on it, but if you put it in the computer upside down you get an entirely different collection of files. Or a book that tells two very different, but grammatically correct, stories depending on whether you read it from left to right or right to left.
We were only reading one 'side' of the DNA, but when we were making changes we were changing the other side too and messing up whatever that part of the second side controlled without realizing it.
