Voyager had some solid eps, and even at its worse it still felt like Trek. All of this new stuff just seems like an original IP that got Trek slapped in it at the last minute.

Avoid anything new and save the movies for when you want more of a specific show, like watching a TOS movie if you like the original series. That's about it, really.
Outside of that broad guideline, you can also pick based on what you want to get out of the show:
TOS: Watch a Chad flirt with aliens and chad his way around the galaxy alongside a fun side cast. Definitely shows its age, but it's still pretty fun.
TNG: Watch if you're more interested in the exploration and knowledge side of sci-fi. Also the characters are great, minus a couple recurring characters. Quality varies a bit. Most people agree the first season is somewhere between "ehhh" and okay.
DS9: Straight-up Star Trek sitcom, honestly. The characters are great and a bit more varied than usual. There's a war plot that kicks in later that people are kinda iffy about, but I liked it on my first watch.
Enterprise: Watch if you like watching a bunch of bumbling newbies flying around the galaxy in a hunk of junk making a bunch of questionably-okay decisions. A bit more action than the other shows. Gritty, but that could arguably be a good thing?
Voyager: Watch if you like zero consistency in aliens, threats and settings. The Voyager crew is traveling through completely uncharted space and the show has basically nothing to do with the rest of the franchise, because they're on literally the opposite end of the galaxy for most of it. Janeway herself is a bit polarizing; I think she's subpar.
