There's no way you could tell one story that covers everything, just take the approach that it's not about advancing the wider narrative, it's about Your Dudes. Focus it on a squad of Space Marines or Imperial Guard, explain the basics of the setting, the region they're fighting in and the enemy they're at war with. Introduce wider lore as and when required.

No. 40k is a fuck ton of stories happening. I'm currently reading a story about a commissar trying to find a not Choas Traitor. What makes 40k story is all the stories that are happening not one big story.

I'm new to 40k but that sounds really fucking boring. I enjoy the idea of a universe where there are tons of multiple stories going on, why the fuck do people even want some "epic" universal story.

you can either do an episodic show focused primarily around the Guard, fighting multiple enemies, occasionally getting support from different Imperial elements.
or you can have a longer narrative about an Inquisitor.

A GoT style episodic arc where they go over the Garviel Loken trilogy (Horus Rising, False Gods, Galaxy in Flames) would be killer. Especially if the 'end credits' easter egg was showing the Eisenstein flying away from Istvaan.
