because it's a hugely popular cartoon that was beloved by a lot of kids in the 90s-early 2000s. so artists try their hand at drawing media that they liked and they even take another step to change stuff to their liking, to the point some artists from different backgrounds will try to make themselves reflected in the art they do.
also but don't worry, no matter how many fat, black, latino, crippled, transexual, gay, or whatever the fuck versions people want to draw, the original designs will always be there, completely unaffected by all of this. even if the artists themselves explore some alternative, the original is still there, isn't that wonderful?
