There was a few solid years in the 80s where she was basically treated as the closest thing the Uncanny X-Men had had to a lead character, with a lot of focus being put on her learning the ropes of being a member of the team, and a lot of focus being given to her relationships with other members of the team (her romance with Colossus, her sisterly bond with Storm, and her adventures as Logan's sidekick). Naturally a lot of writers who grew up on that period saw a lot of her, and plenty of them grew to have crushes on her, which is why they will both use her a lot and have a tendency to pair her off with author surrogate characters.
