It's weird how pre-cancellation Family Guy was more corny and cute ("Who touched the thermostat?"), while post-cancellation is cold and cynical with a lot of gore and politics.
Perhaps this is a metaphor for how our society is more cynical now compared to the buoyant 1999.

They found out this was an unsustainable model, so they revamped and turned the show into what it is today.

This is true. The hopeful future we had in the early internet days was brought to a screeching halt, and suddenly we were a lot more vulnerable and the world seemed a hell of a lot scarier. This turned into a downward push into cynicism and near-nihilism, which affected literally everything from politics to TV to the economy. We still haven't recovered from 9/11.

It's not weird at all. Pre-cancellation Family Guy was great, hence why there were huge internet campaigns to get it back when it was cancelled. Believe it or not, there was a time when Family Guy was basically universally loved on the internet and considered the best animated show ever.

It's a shame that Family Guy and Futurama were cancelled early, were revived due to fan demand, but FG is the only one that is on to this day while Futurama only got 4 movies and 2 seasons before getting canned again.
What went wrong? Futurama was the superior of the two and was much more creative and funny.
