They can admit to it all they like, but it doesn't mean it's true. They sound more agnostic than atheistic in that case. An atheist writing a story would probably just keep it like real life, where religion definitely exists, but any acts of god have either a logical explanation behind them, or are coincidental. Like the good parts of Ice and Fire.
