The Thor & Hyperion/Superman adventures was fun, deserved more story time.
I'd say just give Thor a solo run where he interacts with extraterrestrial characters exclusively, Cap would only slow things down because you have to come up with threats that would be relevant to both him and Thor, and that's no easy task
I really couldn't tell you, most of the greats are gone. A part of me would want it to be Jim Starlin but I guess that ship has sailed. I somewhat dug what Straczynski was doing with him... I'd say just look for new talent

The thing right now is figuring out what place Thor has as the new King of Asgard. We have the concept and stories to back up what Odin was to the universe. But Thor? He just started his reign (for the 3rd time)

Quit trying to make his costume look like medieval armor. He is not from Earth and his armor is made by gods. It should be fantastic and impractical by Earth standards.
I would have a Thor solo series play out like the Superman of Marvel. He is the big gun that takes out major world ending threats like alien invasions, giant meteors, and space gods that show up.
He is the one who will fly out into space to go knock a meteor out of the direction of earth, then he stops an Ovoid invasion from happening in orbit. Then lands down in New York to handle the Wrecking Crew from messing up the streets again. And then the occasional human that is overly threatened by a god taking up residence on Earth like Zarrko and Grey Gargoyle.
I would have his main function to be defending Earth from mystical threats created by the interference of the gods in Earth. Too many times gods have empowered a human and they became a major threat, or made a monster, unleashed a monster, or something mystical that Thor took up responsibility to stop when they appear.

You can always have Lorelei pull a Poison Ivy on any of them. Have Thor hold off/contain her magic while Cap does the brawl which is not her especiality
yes but it would be silly if most of their fights go like that, you can't always have Lorelei or Amora or whomever be foiled by Thor while Cap does the fighting. Lorelei wouldn't lose to Cap anyway...

A story where multiple pantheons of Gods that are mutual enemies using or trying to use Earth as a colony/resource fill/cannon fodder for their wars would be great, but pretty sure that story has already been done
