I'd go a reboot route with Mandy as a teenage babysitter and Billy her eight year old cousin who ends up befriending the Grim Reaper and winning his service via beating him in a contest ala the original.

That way, you have a tangible reason for Mandy and Billy being together and why Mandy puts up with Billy (they are family). And a legit reason for Grim to stick around; he wants Mandy to care for her functionally retarded cousin as far as passive-agressively dealing with being stuck with them after losing the contest that bound Grim to the two.

If you just say fuck it to the teen aspect of it, and just have more Grim shit like business as usually, sure.
If you try and follow current trends like lore dumping in between "Le Zany" comedy like every fucking current show, they it would suck dick.
Honestly, just follow up on old episodes. Billy being a Norse God, The Spider-Queen, Mandy's worm future etc etc use them but lampshade it with how they've grown now as people/young adults

The only reason to change the formula would be to use those changes. There's nothing about them being kids that makes them less suited for a show aiming for an older audience. Might as well keep them that way if being teenagers doesn't change much.
