The difference is there as an indefinite amount of time between Ep 2 and 3 and the prequels had a lot more potential than the ST, both in terms of setting and in terms of actual interesting characters. What interesting characters are there to explore during 1 year the ST covers? Between AOTC and ROTS, there's an entire war fought out. Between TLJ and TROS there's uh... just the resistance fizzling out.
Maybe they could do something post sequels but the actual ST era is pretty much shot.

I know it's controversial, but I think that the books and comics already redeemed the sequels for the most part, however that's way too niche of a medium and will go right under normal fans' radars. I know a show that does the same is totally possible

A show set during the Galactic Civil war without the cringe of Rebel and isn't so much focused on the Rebellion but could certainly tie in. The Clone War era Republic and the post Republic Empire can be seen as two different eras with interesting cultural changes in the Core.
It's not too late. I standby that being what Starkiller Base should have been, but if they reveal that Palpatine had one and was slowly feeding the first order resources in a comic or something, I'll be more than satisfied
Also an adaptation of Tales of the Jedi (focused on Ulic) would be a cool way to reintroduce the old republic era.
OVAs set around General Grievous' time as an enforcer at the service of the Banking Clan that also touches upon his upbringing as a Kaleesh warrior and events such as the Huk Wars. Would serve to illustrate what was the state of the galaxy just right prior to the Clone Wars and the crisis the Outer Rim worlds were going through.

I know it be a damn hard sell, but I'd actually like to do a show that's basically a SW series of nature documentaries. Covering the basic life cycle of some of the creatures and beings of the galaxy. Sort of like going over the life of a tusken raider, explaining rituals and customs as they come up.
