I've heard theory that the lie is that they ever left the traintracks, aka they got hit by the train which is why we hear the train noise at the beginning of every chapter intro.
It means the happy ending is a lie and you need to accept it
The "happy endings for everyone was a lie" thing is pretty much the only way it can be interpreted.

are acceptable theories but it also can be referring to the fairy/folk tales that OtGW is inspired by.
The beast isn't just some animal, the woodsman isn't an insane murderer, the pumpkin people are just (mostly) normal people, the father who funds the school isn't just an evil bastard, you can't reduce someone down to one core trait, the talking animal companion may not be entirely benevolent, the ghost isn't real, the old hag is actually a nice person, Wirt isn't really a loser (it is shown that he is actually well liked by his peers, he just needs to be more sure of himself), the lamp isn't the soul of the Woodsman's daughter, and the deals he makes are foolish.
I like both interpretations, and I mean, they're also completely compatible with each other.

Whilst this is a good interpretation, I wouldn't really call these lies "lovely" unless the characters enjoy these lies, so I don't think that's what he's referring to
I thought he was just referring to the "golden memories" being the "loveliest lies". You always remember good times more fondly than they probably were, and likewis, people look at the past (especially the patural folksy America) through the same lens. But I think it's more about happy memories not being entirely honest.
I was more so trying to infer that classic folk tales are the lovely lies.

It is worth mentioning that those theories are not mutually exclusive. While is probably exactly what they meant, it isn't outside reason that they really did die as well.

The "Fall" bit means the leaves are moving towards the ground but it's also a pun on the term Fall meaning Autum
