What season do I stop watching? I'm about to binge this. But only want to watch it for the comedy/adventure portion since I'm not big into deep lore or tone shifts, which I heard this eventually suffers from.

Watch up to Season 5, then watch only the good episodes of season 5, then watch the mini stories with Finns mom and the origins of the human island, and maybe Stakes - but prepare for a huge bastardization of the characters in it. After that, nothing else really matters. It's a bunch of episodes written by pseuds and midwits.

Stop at the end of Season 4. You could keep going through the first half of Season 5 until it really turns you off, but that’s where the disappointment sets in

Watch it through and think for yourself like a fucking grown up. Even if you don't like where it goes, you can stop and make the judgement yourself instead of a bunch of retarded faggots on a message board disappointed that their kid show has a modicum of depth.
Yeah, the show gives all its characters deep backgrounds and gives the world a history, as if that's a bad thing. Most of the show is comedic, silly adventures for children throughout its run till the end with outside of the three major multi-story arcs and the lore heavy episodes.

Just watch until you stop enjoying it. You're not going to get a definitive answer because there are still fun adventure episodes well into the show's run. If you want to avoid any major tonal shift then stop at season 2, because even by season 3 the show starts shifting gears.

Skip episodes 3 (another grayble shitshow), episodes 7, 10, 19, 22, 24 (more grayble shite), 44, 47, and 49 I remember as being below average so skip them.

Skip everything except episodes 8, 15, 16, 23, and 31. Season 6 is largely shit.
> Season 7
Stakes is a massive letdown and not as creepy as I was hoping, would not recommend (though the alternate intro is a fun watch), skip everything except episode 24 "Hall of Egress" and maybe watch episode 25 "Flute Spell" if you are invested in Finn's love life. Episode 26 is a bit of fun so Ill recommend that one as well.

Is mostly bollocks, skip everything except the Island miniseries (episodes 20-27).

The Elements miniseries is sort of middle of the road, better than Stakes but worse than the Islands, watch it if you want to but its not necessary, if you don't want to then skip the entire season.

My issue with the Grable episodes is while they are fun nonsensical mini adventures in the spirit of what OP is asking for, they are too short to really be enjoyable, they come off as more a string of 5 or so bumpers that are strung together to pad out the season episode quotas. Its stupid fun that isn't that fun.

S4-onwards is pure hipster bs
The 2010's were filled with "lore" animated series that all managed to set up an interesting world and characters with mysteries attached to them, fandoms got invested in seeing all those set up plot threads and backstories resolved, and they all failed to deliver. The revealed secrets and conclusions couldn't compete with the myriad of interesting ideas the fandoms had already theorized among themselves.
Gravity Falls, Adventure Time, Steven Universe, Ore no Diminutive Horse, all had that same problem.
Ice King was so interesting when we only just started to get snippets of his past as Simon with Marceline, but I've rarely seen a more disappointing conclusion to a character's arc.

Personally I think season 2 is peak Adventure Time, season 3 is still really good but I consider it to be the start of the downfall as it introduces a lot of elements that ruin the show;
> Holly Jolly secrets starts the Ice King backstory that will go into way too much detail and ruin the character in the long run
> Flame Princess is introduced and Finn's teen angst phase will follow in seasons 4-6
> A lot of side characters become more prominent for better or worse; Marcelene, LSP, Tree Trunks, etc.
> Fiona and Cake are introduced, and while its a fun "What If?" story, I feel this was heavily inspired by Tumblr fanfic types of people and this element of the fanbase would slowly seep into the show as the seasons went on, which would cause the showrunners to lean more on the lore and relationship drama than fun adventures
Also just looking at what I consider to be subpar/meh episodes from the initial 3 seasons, season 3 has the most;

I wish AT kept all the lore to background art, names of locations, etc. The first season with skeletons and ruined buildings in the background made it very interesting and had such a nice contrast to the upbeat show.
Dad's Dungeon, What Was Missing, and Thank You were "sub-par"??? Geez dude, those are some scorching takes.

Well, I'm that guy who also hates the Graybles episodes that everyone else apparently loves, so take my opinions with a grain of salt.
Skip s6 because its plot is the most self contained of that season.
But then you get none of the payoff from all his angsty times in season 5.
