I haven't even finished season 1 so I can't really say.
But reading OP,
I honestly think it'll fit better if they go this way.
Because what I've seen so far, Steven's problems aren't actually addressed in each episodes.
And it seems like his childishness causes 90% of the episode's conflicts.
Even though he/ or the gems resolve the external conflict, the actual problem that caused it doesn't seem to get addressed.
I would love to see if this later explodes into psychotic behavior
