Sexual Equality was going to be a rising thing in the Avatar World after the war, both because just like ours there's probably a lot of dead men who fought and died, but also because of women like Katara and Toph kicking ass. Katara also is a jealous woman, and Aang genuinely loved her, so it's really not in his character even if it might be for the good of his people. The Air Acolytes did a good job (after he taught them) creating and peserving Air Nomad culture for future generations.

By all accounts. He has three children with her and both are them are heavily involved in their upbringing, with Kya (their waterbending daughter) living with Katara after Aang's death. Bumi and Kya are a bit resentful of Aang, but Tenzin has a great relationship with both parents. So yeah, nothing to imply any coldness, Katara never badmouths Aang, nobody does but Kya and Bumi a little bit, and they get over that.
"Equality" already seemed like a thing last time I watched this show. Katara went on a few feminist tangents because she got patronized by Sokka and the Water Kingdom guy but that was really it.

There's the Northern Water Tribe, who are obvious v.sexist, the Earth Kingdom who are merely typical, and the fire nation who are pretty advanced and even have female soldiers serving in the ranks of the armed forces (though seemingly only in the home guard or in places like The Boiling Rock).

Also, isn't the Boiling Rock one of the few times in the series the characters get to know the soldiers? Most of the time other than that I remember them being covered in too much armor for it to really matter.
There are no female Earth Nation soldiers, or weirdly Dai Li despite female spies being a thing throughout history and usually being useful as honeytraps etc. Toph is an aberration, they just don't draw too much attention to it since they're not as sexist as the Northern Water Tribe.
And kind of. The armour is still not chunky to work out whether or not the wearer is male or female. There aren't any female mooks in the series till season 3 when the Gaang are in the Fire nation on their home turf. There's no female commander or generals. And I'm not insulting the show for this, it's accurate and isn't offensive or whatever dumb shit, it's just a thing in the universe.

they will never be anything more that shallow wannabes and in time would shift or adjust the teachings to more suit them.
and THAT would have been far more interesting. Say, the acolytes became nomadic in the sense they made use of the newly invented large zeppelins. Their culture would shift to place more importance on mechanical workings and materialistic requirements sure, but they still kept that "free as the wind' feel of the old nomads.
Maybe use that as a point of conflict with aang or tenzin, like they are unsure of it all.
I'd assume the Fire Nation let women serve but didn't use them on the frontlines for the sake of practicality - losing a woman in a multi-generational war is more harmful than losing a man.
If anything allowing loyal women to serve in a national guard equivalent is just practical, especially after losing who knows how many in a 100 year war.
Bending shaped the culture, but Air Nomad Culture isn't strictly a genetic thing. I think they were partially both Aang and Tenzin's insurance policy in case either died, either before or after having children. If before, at least Air Nomad culture would survive past them, would be passed down, and eventually an Air Nomad Avatar would be born again who could pass on their airbending genes. After, so that if Aang or Tenzin died before they could teach their children about the culture, someone else could.
Plus politically it was a seat on the United Republic Council that Aang would basically directly control without actually being there himself. Though your Zeppelin idea is cool, it is kind of a shame they did just "conveniently" find some more Air Bison in TLOK.
