It was gateway to Egypt, pretty much the prime food sources until 16-17th century. Wheat was the reason why Selim also invaded Egypt afaik. Apparently there was a famine in İstanbul back in the day, wheat was carried by carts to İstanbul from Konya (Central Anatolia), but it was much faster and cheaper to carry them from Egypt by ships. So Selim used Caliphate title as an excuse to conquer Egypt.
Wheat was also the reason why Roman Empire also invaded Egypt as well, similar to a reason like Ottomans, this time Rome was having a shortage of food.

No I mean, Levant is a gateaway to many places. You can easily go Iraq from there, you can go to Anatolia or Egypt or Arabian peninsula. All of those places are important one way or another, like Iraq/Arabia has petrol, Anatolia sits on a lot of petrol/gas pipelines, Egypt has Suez canal etc. So one way or another, you will pass through Levant if you are a dominant power.
