My theory is that since Europe is mostly a temperate climate they did not need to season their food as much since spices act as a natural antibiotic and food preservative.

they just didnt have as many spices, and the spices they did were not as good as the real spice (salt and pepper). The roman empire imported a lot of spice from india but after the collapse they lost most of those.
