For convenience sake? It's easier to eat rice and various curries when you're eating with your hand. Same when you're eating a roti/chapathi/nan/paratha since you have to tear off pieces from it and dip it in curries. All of the above is much more difficult when you're eating with the standard fork-spoon-knife combo.
When Indians eat other things like fried rice, noodles, pasta, etc we eat using fork/spoon. This is like asking why people eat burgers with hands.
