I've always heard nippon steel is better at cutting through bone and flesh but isnt made for armor like European/middle eastern weapons. Is that because samurais mostly went up against peasants and wore wooden armor?

in samurai battles katanas weren't even used most of the time. The spear was the main weapon, katanas were a backup.

Thing is that longswords were meant as a primary battle arm at a time where full steel plate body armour was not uncommon, while katanas were entirely sidearms/PDWs; A samurai's real main weapons were bow & arrow or a polearm, depending on the era.
Then again, most medieval european soldiers prefered a variety of polearms for battle use, with few exceptions.

a true medieval sword is a stabbing implement that traces it's roots to the gladius, aka the big stab-stab
it is however completely useless against full plate armour, you'd be better off with a mace or a dagger

You don't hit plate armor with a sword and leather armor only exists in Dungeons and Dragons.

Rome used short-swords for huge success, but for that they also revolutionalized warfare and used many sidearms to repel its weaknesses.

Most trained warriors used mixture of weapons, right for right job.
