It was palmer or norris that were infected since there's a scene with the dog entering a room with a shadow, clark wasn't watching it until they found out the dog thing

When he was alone with Palmer when Childs was in another room while Nauls and Macready were investigating the shack, right before Nauls came back trying to betray Mac. Norris' heart attack was brought about by the rapid replacement of his biomass with The Thing's that he was unaware of when Palmer gave him a wet willy to transmit Thing cells to him.

I believe that Norris was the guy in the room when the dog went in. Other anons disagree and this is a hot topic.

The film strongly suggests that the two guys were taken at different times well apart from each other. the first curly-haired guy is taken when the doggo walks in in the first act. The second guy is taken en passant when Mac observes that a second pair of long johns (like the one found earlier) was found some time later once they hunkered in.

Word of god states it's Palmer, and it makes sense because Palmer is actively sabotaging and second-guessing the efforts of the group at every corner from that point onward until he bursts, and has many many appearances when he's just on his own not in contact with another character. The shredded long john's also match Palmer's clothing.
Norris meanwhile has no opportunity to be infected except the few occasions when he's alone with Palmer.
