Old guy probably had no idea they were shooting a film and just spoke as he would which suits Chigurhs confrontation dialogue.

That's a major theme in his characterization. He flips the coin, giving the illusion of choice, but the film makes a point to demonstrate that he's the only one to see the actual result, and thus arbitrate the outcome. The main purpose he uses a coin-toss is to gauge the reaction of whoever the fuck he's trying to intimidate to see if they're hiding relevant information. It's why there's identical cuts in the scenes where he lets the accountant live, but kills the wife.

You mean like the trailer park lady? Probably. The only reason he gave a shit about the old man at the gas station is because the old man took notice of his car's license plate.

I think it's more that he uses coin flips because he has a very deterministic view of the world. He's probably a bit fucked in the head and thinks that the people he kills were just fated to die because all of the choices and events in their life led them to be in his way.

When the old man makes random conversation about his license plate and Anton starts to think about how he might have to kill the guy, he asks about his history. It's why he balks and chokes on the peanut he was eating when the man mentions that he married into owning the house and gas station. It was a crazy way for the guy's life to intersect with Anton's. It's why he puts so much emphasis on the fact that the quarter he flips for the old man's life has been traveling since 1950-whatever to and fro and from person to person and ended up exactly in that moment at that time to make that flip. It's why he says that the old man's been putting up his bet his entire life; every choice and action in the old man's life has contributed to that single moment where he rings up Anton's gas and food and makes small talk about his license plate.

It's why the wife at the end is so adamant in not choosing the result of the coin flip. The point is that Anton chooses to kill people and the coin flip is just a flimsy justification. Free will vs determinism.

That was my point. The coin-toss was always a red herring used to achieve ulterior motives. The entire gas station scene is basically a film adaptation of rolling a natural 20 on a DnD Intimidation check.
