I would bet the last shot will be of Yeed walking away from him on Planet Yeed to join a group of other Yeed creatures. We'll MAYBE get the name of the planet, but not of the species or anything else about them to preserve the mystery.
Mandalorian takes places well before the sequel trilogy so that shouldn't be a problem. WIll Luke show up? He could, technically, but you'd have to find an actor who looks, sounds and acts like young Mark Hamill. I don't think that's going to happen.
Sequels are like 30 years after ep6, this one takes place only few years after it, they will never get to sequel events at this rate. Luke will require either lookalike or cgi stuff and they wont do that because Ahsoka is their connection to jedi shit

I really would rather they didn't include any Jedi stuff at all, but I know they can't help themselves. I'm fine with the Darksaber since that's a Mandalorian weapon, but would rather they leave the rest alone and just focus on the criminal/bounty hunting side of things.

Of course they can just ignore the sequels, it has already been done in Legends, and right now it is their most likely/best option.
I mean there is a reason why they basically bootyclapped both established lore and logic to bring ahsoke back from the dead, both in clone wars, where she was supposed to die during order 66, and rebels, and part of it is because she is basically what Rey was not, i.e. a female jedi protagonist loved by the fans. There is also a reason why they created baby yoda in a show where ahsoka will make an appearance this season, and also maybe ezra.
They're going to create a bunch of content for the era between the sequels and OT, i.e. the era that people actually wanted to see, and then when they get to the sequels they're gonna do a little bit of lip service here and there and then pull a Star Wars legacy, and basically have Ahsoka, Ezra, Baby Yoda etc create a secret jedi order, and then jump 50-100 years into the future, and just soft reboot the franchise, and thats where they'll make the new movies and such. Basically "Oh you didn't like the jedi under Rey? Ok, well we love our fans so much, so here is a new/second jedi order created by these popular characters :) We're good now, right?"

Judging by the episode he directed for the show he apes George's style rather well, but I don't think the general audience will be down for this "outdated" filmmaking.

I mean, i think its also fairly likely that it is mandated by disney. I mean, its obvious that they didn't expect the Mandalorian to succeed or at least be the ultra hit that it is now. Its always easy to see how much faith a company has in a product by how much ads, but also merchandise they produce for it, and the Mandalorian had basically none, no baby yoda plushies, basically no legos, figures etc. but they basically put it all into overdrive once it started to perform well.
The Mandalorian can't go on forever, and it makes sense that the higher ups at LucasArts/Disney would want to somehow connect it to the larger universe and use it to set up future projects to branch out into, i.e. basically the exact same way they used easter eggs, cameos and post credit scenes in early Marvel films like Iron Man to set up the MCU. I mean, we're already kind of seeing it with how they used this to bring Cobb Vanth from the books to a wider audience, or Boba back from the dead.
the GA just has to see baby yoda on a movie poster and in commercials outside of disney+ and that will get them to turn out initially.

Now that i think about it the High Republic is probably a sort of test run for this, which would be a pretty smart plan. You can set things in the past and make it far more detached since you don't need to answer questions such as "Well what happened to character x and y", and in this case Disney can basically go "Ok lets do a few books, maybe some comics and a tv show, and see how people react." This way you can see if people like or dislike time skips like this, what people react to in what way etc. and then they can apply those lessons to bigger projects in the actual time skip into the future.
