Why'd they put his face on the cyborg body? It just looks jarring and unnatural
Also how much of him was still human? It was never really clear if he was just a brain in a suit or like, had lungs. I figured he'd just be a brain because otherwise they would be sticking frail human parts in a supposed death machine

I understand both sides. On the one hand, CGI an be really uncanny and weird, and take you out of an experience. On the other hand, a lot of small CGI goes completely unnoticed by people, so it's not universally bad.

The entry wound for the headshot is a nice touch. Such attention to detail you rarely see anymore.

Maybe they wanted to give him a human face. And the alternative of using his actual skull would have been too much of a liability.

These kind of concerns are what drove the 2014 robocop filmmakers to do this

There's literally an argument between two characters about how they agreed to a full-body replacement.
Murphy is just a brain and a face (under his face is a metal skull). The face was kept to help him interact with humans and not terrify them.

He gets baby food fed to him in the first movie, he still has a stomach. The skull is completely metal, though, and the face is slapped on in order for him to look less artificial to the public onlooker. Bridging the uncanny valley.
that's the problem though, instead of just using CGI for that small unnoticed stuff, too many filmmakers go into full "everything needs to be CGI" and the entire movie ends up being a dozen actors in mo-cap suits in front of a green screen
well sure. if you have a brain it's got to be supplied by something. the digestive tract and lungs could be partly or entirely artificial, I suppose, but you still gotta have em.
