if John Wick or Jason Bourne tried some dumb "takedown"/disarm shit on him (even if they had a knife) he could just choke slam or deck them in the face
he can adapt to and dominate any kind of environment while putting himself at the minimum level of risk, while Bourne is only good at infiltration/espionage assassination stuff, and John Wick doesn't have any kind of survival skills (at least none on par with Rambo).
sure John Wick has his little peashooters and tacticool stuff, but Rambo can operate virtually any kind of weapon system and military vehicle on earth and I'm sure it wouldn't take him long at all to figure out something he hadn't seen before.
He can also improvise weapons better than Bourne can, and his superior strength makes him a greater threat considering he has a similar or greater level of cqc training than Bourne

I suppose OP should've defined the environment in which the fighting would take place. In a woodland/jungle Rambo easily wins as he'll easily trap them or kill them all with mines.
