He's in touch with his emotions, he can be furious but at the same time he's caring and calm and I can imagine growing up with Sisko as my father would be far better than the alcoholic and angry father I grew up with who made me constantly feel unsafe.

Tough question OP. Not too many great dads in Trek. Many childless and/or orphaned characters. For me I'll say Dr McCoy. Dude cares, and he knows how to drink.
O'Brien does his best but I think it would be hard growing up with him. He's a drinker and workaholic who has been through some serious shit (fought in multiple major wars including savage ground combat, also saw his life usurped by a clone, wife possessed by the devil, went to mind prison for 20 years) and can be coarse and emotionally awkward.
Sisko would be a cool guy to be friends with, but he has a hard time raising Jake and in the end abandons him. But the best thing to recommend him is that he really loves his kid and inspires his kid's love too. Something that stood out to me on my last rewatch of DS9 is that Jake's story across the show is tragic as shit. He loved his dad so much he literally laid down his life to save him in "The Visitor". Yet within a couple years he had to lose him anyway, and was powerless to stop it.
There really aren't a lot of good dads in Star Trek. Hey just like real life!

He was the emissary of the prophets, chosen for some special role before he was even born. He didn't just flippantly abandon Jake so he wouldn't have to be responsible for him anymore. And besides, Jake was an adult by the time that happened.
