How do production companies do this? How can you write a contract that effectively says "We'll use whatever parts of this IP we like and change whatever parts we don't" and more importantly, who would agree to it?

That really doesn't make sense with someone massively successful (and crucially, rich) like Pratchett, it must have been how you define an adaptation
It will fizzle out like the shitty Dirk Gently adaptation they did a few years ago.
