Not true, Vitamins and minerals are mostly destroyed/dentaured during cooking(depends on temp). Enzyme's are denatured with heat, enzyme's help break down the food more efficiently.
Went to Japan a couple years ago and unironically liked the American sushi more. Japan’s was fresh as fuck though and you felt really ‘clean’ after eating it. The ramen in Japan is unmatched however and shits all over any ramen I’ve had in America. Can’t even begin to compare

I eat raw meat,eggs, raw milk, some fruit rarely. Nut/grains are historically eaten by peasants that cannot hunt or use their brain to acquire animal products.

Anyway you are referring to beta carotene which inst actually Vitamin A, It's a precursor and many people do not have the correct enzymes to convert beta carotene to vitamin A.
