I pay next to nothing for my current VPN works out as $3 a month. Why would holding a Sentinel token be worthwhile? Surely as it rises in price so will the cost to use the service? I don't want to pay for a service on crypto when I can just use regular money. This seems like a straight investment I pay X amount now then sell for a profit and not actually use the service.

sent dVPN is decentralized so each node will be able to set the price, service price will be probably tied to $ cost of bandwidth, as the SENT token appreciates you would pay less sents for every mb.
also keep in mind that sent token main purpose is to secure sentinel blockchain and it will be used for governance and protocol upgrades, to use it a utility token is only secondary.
think of SENT in the same way you think of tezos and cosmos coins , also sent holders will get part of the fees from people using the dVPN
