Fate/Stay Night (original, patch the voices if you want) -> Fate/Hollow Ataraxia
Anime route (release order)
Zero -> UBW (Ufotable version of course) -> Heaven's Feel
And I'd recommend also watching Kara no Kyoukai first because it introduces a bunch of important concepts (takes place in the same world, anime was made by the same people too)
The Deen studio "universe" is shit so just skip it. It's both inconsistent with the newer version and the VN at the same time
F/Z first, then get disappointed with F/SN (2006)

Fate/Zero is fine standalone and is the best part of the franchise due to being written by a far more skilled writer. If you want to watch more than just Zero, watch UBW first, than Heaven's Feel, then Zero. Carnival Phantasm is fun to watch after UBW and HF if you want some laughs. Don't waste eighty hours of your life on a visual "novel".

Watch Prisma Illya, then from there play Fate/Extra CCC and don't stop until you get 100% on it, then start the visual novel but work you way backwards from Heavens Feel to Fate, stop half way through HF and shitpost about it on Zig Forums, then watch Fate/Zero while watch the 2006 DEEN F/SN anime on another screen AT THE SAME TIME, after that you may play Melty Blood Actress Again: Current Code and become the number one ranked fighter with SHIKI (there aren't that many players it won't take long), then FROM THERE DON'T finish the rest of Heaven's Feel but instead delete your save data, play the prologue three more times just to make sure you understand the Holy Grail War and it's rules, then watch the Unlimited Blade Works movie, then watch the Unlimited Blade Works anime, then watch Fate/Apocrypha on 3x times speed while you start reading the Fate route, then mid way through THAT stop and complain how boring and shitty it is on Zig Forums, then after that jump back to Heaven's Feel because "it's the only good one", then watch Carnival Phantasm and read TAKE MOON and that should just about cover it. Make sure you follow this order exactly otherwise you'll be deprived of the true F/SN experience Nasu intended. Have fun!
No one else is going to say it so I guess I have to. It's because it's the simplest and shallowest so it's easy for brainlets and secondaries to understand without getting pissed off and screech endlessly about 'plot armor' 'asspulls' etc etc because they didn't get something as they usually do with the other works which require you actually pay attention to get everything. It's grimdark and 'mature' tone also helps cynics feel like they're watching something far removed from the usual tripe and that their taste is unique compared to everyone when in fact it's actually not actually all that mature or dark at all beyond a few moments that were crammed in for shock value and because 'muh tragedy' when very little of it actually added to the story at all. But they'll think otherwise because bad things happening to people = depth. The MC is a stoic, misunderstood, self-loathing jaded badass who is the only who sees the world for the mess it is, wears a trenchcoat, smokes constantly, has two insanely hot bitches on his dick and uses matrix and gun magic who's secretly a crying manchild who just wants to be held and understood and get away from all the injustices in the world. Which, of course, attracts a lot of the folks on here. Fate/Zero isn't bad by any means, don't get me wrong. I enjoy it but looking at it objectively after a few years of sucking its dick back when I was an angry, aimless teen really opened my eyes to the reality it's no masterpiece. Not by a long shot.

OP, watch Fate/Zero and Fate/stay night: Unlimited Blade Works
Fate/Zero is a prequel so it doesn't matter which order you watch these two but people usually go with the zero since it was released first.
Any other Fate related garbage is irrelevant and any other answer is wrong.
The order is Stay Night (either VN or watch Ufotable's UBW and Heaven's Feel movies) then Zero
everything else is optional and should come after the Zero and Stay Night, Hollow Ataraxia is good though so I highly recommend it
Fate/Zero is a prequel that was written to be read/watched AFTER going through Stay Night
You're ruining the experiences for both series if you do them out of order, you're supposed to go into Zero having an idea of what is to come so that the struggles of the characters are framed more meaningfully and likewise, with Stay Night you are supposed to learn elements of the plot throughout the story naturally instead of already knowing them from Zero
