Add GRRM to the list, A song of ice and fire will never end, and that's a good thing from his perspective, One Piece is going to end soon tho, and it's already lost it's charm and has been on a steady decline since the timeskip.

can't speak for samurai jack but generally the japanese cannot write endings whatsoever.

Most series authors don't start with an ending in mind. Togashi specifically doesn't even plan out much of an overarching structure and follows his whims on an arc by arc basis.

he doesn't need to go on hiatus though, it's not like he's wrapped up ANY of the 1,738 plot threads he started. when he gets bored with something he just drops it and moves on to a completely unrelated storyline and, if need be, completely different characters.

A ton of media is based on history in the first half and current affairs in the second, if you are smart you can notice this trend in all of the major works in Shonen Jump. One Piece post timeskip is suddenly incredibly political Big Mom is a giant metaphor for the follies of progressive thinking and Kaido represents some kind of ultimate fascist authoritarian,lineages and massive groups are suddenly the focus, In Naruto as soon as we get to Shippuden we jump to political espionage, Naruto as a whole is just an incredibly right wing manga all about the best being born the best. I could explain how this factors into most works in shonen jump but i think you get the picture.
