Just started Outlaw Star last night and damn is it good so far. I kinda wish I'd watched it earlier.
I've been working through Patlabor the TV Series slowly over the last month or two. The episodic style doesn't hold my attention as strongly, but drawing it out sorta makes the experience more comfy. It's started to act as filler in-between the other shows I'm watching.
After Outlaw Star, I think I'm gonna watch LotGH. I'm kinda on a space kick right now.

Yes. You are about the point where the director was fired and Tomino was brought back in to save their investment. Tomino originally had nothing to do with the ZZ project, ratings were in the gutter and he was made the highest paid director in TV anime history up to that point to lure him back to save the show.
I actually thought the first few episodes were really entertaining, the more light hearted tone was a nice change but since the blue haired guy left its been utter bullshit

Not technically pre-2000s but I watched Vampire Hunter D: Bloodlust last night. That shit was tight. Definitely recommend if you are a fan of older animation style / dark, violent vibe of Kawajiri's other films like Ninja Scroll.

Where do I start if I want to get into the mecha genre?
patlabor's a good show to ease you in. Its hard to recommend starting with gundam because its a 43 episode 70s show but with Patlabor you can get a good chunk out of it watching the 7 episode OVA then the 1st movie then the 2nd movie
Just pick the show with the mechs you think look coolest. "Mecha" is such a wide net that would include comedies, war dramas, monster of the week series, action shows and everything else that your question basically means nothing.
I was looking for something with a serious tone and action that isn't too bombastic. I remember watching Gunbuster as a kid and enjoying it though it had too many titties for me to take it seriously. I also enjoyed LoGH a lot when I first watched it.

Patlabor, the 1st movie in particular is perfect for what you're looking for then. Patlabor 2 has a very series tone but is more of a political thriller than it is a mech movie, I think the only mech combat is at the very end of the movie

Try the origin gundam trilogy films, can't go wrong with the OG real robot series.
Sounds like you might be able to get into UC Gundam then. You could start with the original (maybe the trilogy films) and go from there, but if that seems like too big of an investment try one of the UC OVAs like 08th MS Squad or War in the Pocket, so you can get a feel for it with a shorter series.

I dropped this around episode 6 since it was literally unbearable, but want to move onto other parts of gundam like Char's counter attack. Do I just need to push through, or can I skip it?
Its not essential for CCA but from what I've heard it is for Unicorn
I dropped ZZ just one episode later than you, and proceeded to watch the entire rest of everything Gundam had to offer without a hitch.
Some stuff from ZZ pops up in Unicorn but it's completely irrelevant for CCA, so just go ahead and don't torture yourself.
