Envy isn't really a "character," since they are just the embodiment of a sin/idea.
Like Malty from Shieldbro, Envy suffers from doing evil stuff because it's in their nature, rather than because they have a realistic motive. They are just evil for the sake of evil (or envy). This means they are not really responsible for any of the bad shit they do though, which makes their punishments less gratifying, at least for me. In my opinion Envy is at least better written than Malty though, since Envy was intended to represent a sin from the beginning, rather than Malty, who was later revealed to be part of an evil goddess in what seemed like a lazy attempt to justify her stupidity.

All greed wanted was friends. The last thing pride thought about when he was about to die was his human mother. Wrath was calm and collected. Envy was jealous of humans. What was the subversion of the other sins? Gluttony, lust and sloth seemed pretty straightforward to me. Is not like all lust wanted all along was true love/a family/whatever, she seemed pretty hateful of humans in a genuine way.
I liked the original FMA's take on homunculi.
They were incomplete humans that manifested the alchemist's desire.
For example, Sloth as Ed and AL's mom. They didn't want a person, they wanted something to take care of them.
Lust - Scar's brother wanted someone to love.
Wrath - Izumi wanted justice more than a child.
With Envy in the 2003 anime, he was Hohenheim's and Dante's dead son. They knew the secret of immortality, so Hohenheim was envious of death. Which is why Envy was such a sadistic killer and maintained no interest in the stone because it would only prolong life. He wanted to kill Hohenheim because naturally an immortal would secretly desire to know death.
It's interesting in the movie, because you find out life and death is an eternal cycle. Making him the leviathan or Ouroboros, chasing it's own tale. There was no true death.
But then Brotherhood comes along and strips it of all it's biblical and esoteric significance.

They also strike a good balance between being cute and somewhat likeable in a entertaining way and slightly sympathetic while still staying a evil PoS to the end

Lust wasn't really that lustful, she was more a object of it. She embodied bloodlust more than sexual lust.

Envy was just doing whatever his daddy told him to, he didn't know better and he didn't see killing humans as evil because he was taught that humans are just a resource for the sake of homunculi.

This was always a major gripe I had with her since I was a kid. Lust is no lust at all. She just looks luxurious and that's it. She should have been a fucking succubus.
I'd say Greed was the better written character.
Succubi are boring and not very sexually appealing
Lust was not about the lustful desire for sex. "Lust" is not literally libido.

None of which defines her character. She was just a woman wearing luxurious clothes. She didn't lust for anything, not even power.

Greed, Sloth and Gluttony's actions were all entirely controlled by their sins though (except for the things they were threatened into doing in Sloth and Gluttony's case). Even Greed was only a "good guy" because of his possessiveness of the people close to him.
I'd actually argue that Lust, Wrath, and (later on) Pride were poorly written because they didn't embody their sins.
Lust was never lusty and Wrath never seemed angry, even at the end. Pride was mostly prideful, yet he was submissive to Father and yearned for a parents love and approval, which is the exact opposite of Pride.
