That's the case for plenty of anime where the writers know what they're doing. Emilia's problem is she doesn't do much to be likable besides be polite and be the first girl the protagonist lays eyes on. She's cute, but so is every single other girl, because it's an anime. Her politeness means every conversation between her and Subaru is largely carried by Subaru. She even spends the majority of the anime off-screen. So it's hard to relate to Subaru's obsession with her. Their chemistry is next to non-existent. Rem is hardly more interesting as a character, given that her personality can be summed up as the words "Subaru-kun", but at least she's more entertaining.
