Did he really give up his ideals? What were his ideals and dreams, either way? His moral worldview was too childish. How do you even become a hero with that kind of mindset? None of that makes the slightest sense. Fate sucks

His ideal was, purely and simply, "I want to save people".

His 'ideal' is basically his way of coping with his survivor's guilt. As Rin often admonishes him, he has no sense of self and no sense of self preservation. So he used the 'ideal' as a justification. This is why in HF he reluctantly admits that he likes Kirei because he's empty like him.

Shirou is a high functioning sociopath. He's the "good" Kirei, Heaven's Feel made the parallel multiple times. Just as Kirei is someone who fundamentally cannot feel happiness unless its at other's suffering, Emiya Shirou's so called altruism is simply him trying to replicate the same happiness he saw on Kiritsugu's face as he saved him from the fire. Fate Stay Night as a whole is very much a story on how Shirou regains the humanity he lost in the fire through the development of his inherited ideal. Unlike Kiritsugu who blindly chased after the grail until the very end, Shirou from the very prologue is aware of the impossibility of his ideal, you can't save everyone, one party will end up getting hurt regardless (as seen from the bank robbery analogy used in a monologue).

Because he met physical proof that his ideals cause him to be miserable for all eternity and will ultimately result in him losing his mind, yet he insists all is well.

It's nothing as complicated as survivor's guilt. When Kiritsugu saved him, from Shirou's perspective he was shining. The sheer joy in Kiritsugu's expression at being able to save someone imprinted heavily on Shirou's broken mind. That's the true foundation. It all goes back to that one memory. Shirou's ultimate goal is to recreate that emotion for himself.

Shirou doesn't become a Counter Guardian in any of the three routes.

Shirou is the most tragic character in the fate universe. He became everything he despised. No matter what, he could never escape his destiny as the Archer - a cold blooded killer mercenary.
