The thing I don't get about Yui's supposed master plan to become an eternal floating monument of humanity's existence, is that wouldn't she realize that she'd go nuts after so long in isolation with only herself as company? This is basic psychology, she'd have to be superhuman or not human at all to keep herself sane without interaction with others.

Was she planning to bring others with her (i.e. the people who didn't reject instrumentality and preferred to stay in the sea of Tang)? In the manga it seems like she brings Gendo along with her in the end.

Yeah, but they're the only people there. And Asuka clearly isn't happy to see Shinji, though she might be a Rei / Asuka / Misato amalgam. It doesn't look like earth is habitable, with the poisons seas, the giant crucified EVAs and the huge rotting Rei corpse.
