Im not huge into anime but I finished watched pic related recently. I really enjoyed its free-form anthology style where episodes didnt necessarily impact the plot of the next episodes so much. I also think the backdrops were well done and detailed as far as a scifi world goes. There were a few jarring scenes of terrible 3d models and a few times the characters should have died but thats par for the course these days.

the episodic nature fit the tone of say space dandy but Cowboy Bebop had characters with some sort of struggle within themselves that was put on the back burner a lot of the time

Where? I haven't watched CB for a long time but it came out in 1998 when especially in TV series 3D models weren't very common.
Some odd gate, but not the normal star gates, in the Wild Horses episode. There was another one too but I cant recall. It was reboot tier special effects.

I wouldn't call trigun "space western" but if you are looking for something that's sci-fi with low a sort of western aesthetic or generally common use of lower level tech there's definitely more.

Ive seen Trigun and Bebop and they really only share a unlinked episodic nature (for the first part of Trigun at least) and a bit of a "western" theme.
