Never looked like it too me. It could be the western christian god sure but they would adress a lot of local deities this way too. Or even buddha. I remember one character starting one of these with "if/just in case there is actually a god out there". Characters adressing "kami sama" seems to be more of a literary convention to me than someone actually adressing god anyways. Kinda like how a lot of anime have the MC narrate events through a letter they adress their mother/brother/etc.

Depends on where they are and/or what they believe. There are tons of local gods, protective spirits and the like in Japan, and someone saying "thank god" does not imply they beileve in any.
