I basically know nothing about fate, do I need to read/watch/play the rest of the franchise or can I just jump into this?

It's story is completly self contained. You have a lot less explanations on how the world works in this since most people know by now but if you can live with being thrown right into the happenings I think it'd be fine to start here.

I hope Kanata actually develops as an MC. He feels like he could have potential to be more than the self-inserts that are Ritsuka and Hakuno or Cardboard-kun

I love her entire design and I'm happy the author already gave her plenty of cool moments so far. Looking forward to more based Nobu.

So far? No. The bring up minor things but nothing important.

Hopefully Avenger Okita and Nobu appears for the finale for some over-the-top NP spam and battle scenes to finish it all off.
