Series tries to be edgy in the first arc for attention

The first arc is kind of different for shonen manga but then it's right back to business as usual

There's not really much reason for the series to go into explict detail of what goblins do over and over when we already understand it.
We still see it/the repercussions of them occasionally but I don't really see the point in repeating the same type of rape scene over and over again.
I feel like most people saying it changed from trying to be the next super edgy series to "generic" pretty much just had an idea of what the series would be for 100 chapters without thinking about what the writer actually wanted to do with it.

First arc is really good.

Second arc is okay but only because of the villain. Everything else is fucking terrible.

I didn't read or watch GS until recently, and it didn't feel edgy to me at all. I think you just bought into the hype, and later episodes that dealt with harry situations, like when preistess is got bitten, are tonally consistent.

Nothing was out of the place for the story purpose. The opening episode had the party get slaughtered and raped to demonstrate the goblin threat and how it's underestimated. But I guess you'd prefer pure exposition?
I think GS also has a far more reasonable depiction of someone who's suffered trauma in his position. He's not brooding and edgy, he's icy and estranged from the emotional environment surrounding him, and can't properly communicate in those terms. That's why, through no intent of his own, acts in ways someone would consider rude in other circumstances. His arc is about him healing that, very slowly, as he relates to other people. While it probably wasn't a conscious choice, the fact that everyone is unnamed save their occupation shows this. That's how his psyche processes things.

The way Goblin Slayer portrays rape is definitely edgy.

The series constantly points out that everything relies on the roll of a dice except for GS cuz of strategy or whatever yet hes always bumbling the fuck around and always gets saved by luck.

Not really. The scene was really weak and forgettable. The word edge has been used so many times and unfairly it's borderline an insult to anything one doesn't like. Now, the boy getting stabbed over and over made me feel a little bad.
