Modern world is boring and have little opportunity for interesting thing to happens. By entering isekai, characters and readers will gain a whole new set of environment with new ability and opportunity to develop themselves, giving them a place in the world that they didn't have in the original world.

The thing that bothers me of fantasy in anime is that has become so self aware of itself that every work feels the necesity of giving a new twist (or a twist that has been done already).
Problem is, this has been done since the 90s so by this point there is more meta fantasy wuth twists and gimmicks that actual fantasy played straight. We reached a point where we have more parodies and parodies of the parodies than the actual thing.

It's just escapism for people who regret their past choices and want a blank slate, which is probably 90% of anime otaku. Combine the bland MC that you can self insert in with the generic RPG setting to remind them of old games and you have the perfect nostalgia bait. Of course with the popularization of the genre more series try to differentiate themselves from this basic trope so you get plenty of shit which is almost like this but has a few differences to make it "unique" but the basics that lure people in are still the same.
