Because despite seeming a useless episode, I found it extremely original and disruptive in a positive way. I could read a personal metaphor about life and buried memories - not that the episode is in any case deep or should be taken seriously. Anyone can interpret it as they want.
I like how they tried to combine comedy with horror.
Also I'm a fan of the Alien movies and I liked that the alien/monster thing was a reference to the franchise.
My answer was this episode but I have to admit that I didn't think too much about it since there are objectively multiple 10/10 episodes.
I could rewatch that episode every day just to see Spike and Jet risking their lives to go in an underground museum to get a goddamn Bet player.
I watched Cowboy Bebop and was infinitely disappointed

The real folk blues part 2. It's iconic and finishes the story to an episodic anime beautifully. It's not the best if you liked the comedy more than anything, but the stakes are high because of episode one and still leaves a strong emotional impact despite the viewer knowing what's going to happen before it does.

That's a rough question and changes for me depending on my mood.
Jupiter Jazz or Waltz for Venus.
The former for the plot between the sister and brother and the later for the symbolism and imagery.

I watched it for the first time years and years ago and loved it. I tried to rewatch it for the first time a couple of years ago and couldn't get into it. I still look back on it fondly but I just couldn't make myself watch it again.
I don't know about 'best' but Ballad of Fallen Angels is a classic.
Mushroom Samba
a cute and funny low-stakes romp. The series needed a few more fun episodes to balance out the heavy ones.
I unironically believe the last ~10 minutes of The Real Folk Blues pt. 2 (the shootout at the Red Dragon headquarters, the final confrontation with Vicious, and then "bang") are the greatest 10 minutes in the history of anime

It always seems to be a tie between toys in the attic and mushroom samba for a lot of people in the polls .
Pierrot Le Fou is one of the most haunting episodes of any anime I've ever seen. The atmosphere when it was showing the torture the poor guy went through is something i'll never forget. Plus the callback(?) to spikes eye was a perfect way to end the fight.
