Gremmy’s ability has a major flaw: if he imagines himself loosing he will. Kenpachi was just strong enough and btfo’d multiple attempts from Gremmy that Grammy imagined a possibility of him looking.

Because he wasn't in control of his imagination. Gremmy was a child that wasn't really exposed to the world and was kept on a tight leash by Yhwach so when he faced this monster that kept demolishing everything he threw at him, he imagined Kenpachi as someone unbeatable. If Yhwach instead just gave Gremmy some Shounen manga to read in his solitude then he probably could solo SS.
I thought it was explicitly stated during the battle that Gremmy continously wishes for Kenpachi to be dead and it gives him joy, yet Kenpachi never did, and Gremmy's forced to use outside forces like guns and meteors to kill him. Seems he couldn't just directly imagine things to someone who's just stronger than him.
